    How does vinegar affect the recipe?

    Vinegar reacts with baking soda to create air, helping the batter rise. Plant-based milk does not interfere with this reaction, so no adjustments to the vinegar are needed.
    1:1 Substitution
    Replace 215 g of water with 215 g of almond milk or soy milk without making any other changes.

    If you’re looking for a softer, fluffier crumb, soy milk is the better option. But if you prefer a more neutral flavor, almond milk works well.
