Hi Nazneen Nasseri
Welcome to the Scoolinary community! Thank you for your question.
Yes, you can cut and freeze both donuts and cronuts before frying. In fact, this is a common practice in bakeries to optimize time.
Recommended Freezing Time:
Raw donuts and cronuts (before proofing): Up to 1 month if well wrapped in plastic wrap or stored in an airtight container to prevent dehydration.
Proofed donuts and cronuts: They can be frozen, but after thawing, they may lose some strength, affecting the final texture.
How to Freeze and Use Them Later:
1. After cutting: Place the donuts or cronuts on a baking sheet lined with parchment paper and freeze them in a single layer until solid.
2. Storage: Once frozen, transfer them to airtight bags or sealed containers.
3. Later use: To fry, move them from the freezer to the fridge the night before, then let them proof at 27°C (80°F) until they double in size before frying.
If you need to use them urgently, you can proof them at room temperature straight from the freezer, but the process will take longer.
I hope this information is helpful! If you have any other questions, feel free to ask.
Best regards!
