    Hi Rick.

If you’re referring to the recipe from the Italian Cooking with Tomatoes course by Viola Buitoni, the answer is yes, you can prepare polenta in a steam oven, which is an excellent idea as the steam helps cook it evenly and gently, preventing it from sticking or burning.

Here is the adapted method for your recipe:

    Polenta in a Steam Oven:

    Prepare the mixture:

Mix the whole-grain polenta with water (standard ratio: 1 part polenta to 4 parts water) in a steam oven-safe container. Add salt to taste and whisk well to avoid lumps.

    Cooking in the steam oven:

-Place the container in the steam oven preheated to 100°C with 100% humidity.

-Cook for 30-40 minutes, stirring occasionally if possible (every 10-15 minutes) to prevent lumps and ensure a uniform texture.

    Finishing touches:

-Once cooked and smooth, add butter and adjust the salt and pepper. For extra flavor, you can mix in some grated Pecorino cheese at this stage.

-Keep the polenta warm in the oven at 60°C with low steam until ready to serve. This will keep it warm and prevent it from hardening.

Benefits of using a steam oven for polenta:

-Ensures even cooking without constant stirring.

-Prevents the polenta from sticking or burning at the bottom of the container.

-Retains moisture, resulting in a creamier texture.

    Polenta with Pork:

While the polenta cooks in the steam oven, you can prepare the braised pork ribs on the stovetop as per your original recipe. Once ready, serve the polenta in a large bowl and top it with the braised ribs and sauce.

This method is not only practical but also allows you to save time by focusing on the ribs while the polenta cooks on its own in the oven.

I hope this information is helpful.

    Best regards!
