Starting with the ice cream recipe from the Fundamentals of Artisan Ice Cream course by Chef Hervé Corvitto Lafont:
Ingredients (1 kg):
567 g Whole milk
172 g 35% cream
42 g 1% milk powder
137 g Dextrose
26 g Inverted sugar
50 g Sucrose
6 g Emulsifying neutral
To maintain the fat content of the base ice cream recipe when adding pistachio, we must consider that pistachios have a high fat content, approximately 45-50%.
To replace part of the fat in the base recipe without altering the original formula too much, you can calculate the amount of pistachio to add so that its total fat matches the fat content of the cream and milk.
Here’s how to do it:
Step 1: Calculate the total fat in the base recipe
Whole milk (567 g): Whole milk has approximately 3.5% fat.
567 g * 0.035 = 19.8 g of fat.
35% cream (172 g): Cream has 35% fat.
172 g * 0.35 = 60.2 g of fat.
1% milk powder (42 g): Milk powder has about 1% fat.
42 g * 0.01 = 0.42 g of fat.
Total fat in the base recipe:
19.8 g + 60.2 g + 0.42 g = 80.42 g of fat.
Step 2: Calculate the amount of pistachio needed
If pistachios have a fat content of 45-50%, let’s take an average of 47.5% for the calculation. To match the fat from the pistachios to the fat in the milk and cream, we need to calculate how many grams of pistachio are required to obtain approximately 80.42 g of fat.
Formula:
Amount of pistachio = 80.42 grams of fat / 0.475 = 169 grams of pistachio
Thus, you would need approximately 169 g of pistachio to maintain a similar fat content in the base recipe, replacing part of the cream or milk.
Remember, this calculation is just a guideline. You can adjust the quantities depending on the flavor intensity you’re looking for or if you prefer to use more or less pistachio. Additionally, pistachio will add flavor and texture, so it’s important to taste the mixture.
