Hi! I wanted to ask what grills should I use for what purpose in a convection oven? Like, if I’m baking cakes, cupcakes, pies ,donuts etc should I turn ON both the grills(top and bottom) or only one of them. How does it depend on what I’m baking? I do have a few theories about it but still wanted to clarify. Please do answer with specifications.

    Hi Hanan Sikander.

Welcome to the Scoolinary community, and thank you for your question!

In a convection oven, the decision to use the top heat, bottom heat, or both will depend on the type of preparation you’re baking.

Here’s a detailed guide for you:

    ▪️ Cakes and Cupcakes:

Grills: Use the bottom heat only.

Reason: They require uniform baking from below to rise properly and bake evenly. The top heat could brown them too quickly before the inside is fully cooked.

Position: Place the tray in the center of the oven.

    ▪️ Pies (Tartas):

Grills: Primarily use the bottom heat, and if you want a light browning on top, turn on the top heat during the last few minutes.

Reason: The bottom heat ensures the base cooks thoroughly, preventing it from being raw or soggy.

Position: Place the tray on the lower or middle-lower rack of the oven.

    ▪️ Baked Donuts:

Grills: Use both top and bottom heat.

Reason: Donuts need a light and even browning on both the top and bottom simultaneously, as the baking time is short.

Position: Place the tray in the center of the oven.

    ▪️General Considerations:

Convection Oven: This type of oven distributes heat more evenly thanks to its fans. If your oven has this feature, you can use both top and bottom heat without worrying about overcooking a specific part.

Testing: You may need to adjust the time and temperature based on the recipe and the size of your oven, as every oven varies.

If you need more details about any specific preparation, feel free to ask. I hope this information is helpful.

    Best regards!
