    Hi i just subscribed and i am following the first croissant course by Chef Antonio Bachou (Sorry I believe i misspelled last name) when you see the videos he states the flour is 1350 g with 500g for the butter block but in the recipe book the flour is 1500g

    I am concerned for the rest of the ingredients quantities does anything else change ?

    Also i have a manual sheeter that allowed me to do half the size of this dough if I do the recipe with half the quantities what size should I shape the dough and the butter block?

    PS i have looked d for the answers but i cannot find a way to look at specific questions regarding a course it would be great if the questions could be asked on the course itself to make it easier to check for previous questions and answers

    Hi Adriano.

    I think you’re mixing up the quantities. In the recipe, 1500 grams of flour are needed to prepare the dough. Once the dough is ready, you should weigh out 1350 grams of the finished dough, not flour.

    These 1350 grams of dough will be used for laminating along with the 500 grams of butter.

    As for the recipe quantity, you can certainly make half.

    For half the recipe, the butter block should measure 21×21 cm, and the dough should be a rectangle of 35.5 x 21 cm.
