    Hello,

    I just finished the paella course and I was surprised to see onion in all of the recipes- I have often been told that onion is never put in traditional paellas- any feedback on this?

    Indeed, there is a debate about the use of onion in paella. In traditional Valencian paella, onion is generally not used because its water content can affect the texture of the rice, making it creamier, which goes against the desired characteristic of loose, separate grains. However, in more modern versions or regional paellas outside of Valencia, you might find onion as an ingredient that adds sweetness and depth to the dish.

    It’s important to note that recipe variations can depend on the region and the chef’s style, so some recipes include onion to give it a different touch, even if it doesn’t follow the strictest tradition.
