To calculate the amount of yeast for 1000 grams of focaccia dough, we first need to determine the percentage of yeast used in the recipe, known as the “baker’s percentage.” This percentage depends on the type of yeast you’re using (fresh or dry) and the environmental conditions.
General Example:
– Fresh yeast: typically used between 1% and 2% of the flour weight.
– Dry yeast:generally used between 0.3% and 1% of the flour weight.
Calculation:
If you’re using 1000 grams of flour:
Fresh yeast at 1.5%:
– 1000 g of flour x 0.015 = 15 grams of fresh yeast.
Dry yeast at 0.5%:
– 1000 g of flour x 0.005 = 5 grams of dry yeast.
Recommendations:
– In colder climates, you might consider using a bit more yeast.
– If you prefer a slow fermentation, you can reduce the amount of yeast.
