Today, my toddler and I baked double chocolate chip muffins. She loved it and she ate far too many chocolate chips. These muffins will go into the freezer (we made 12) and taken out one and a half hours before serving.

We enjoy eating oxtail. Here, I served it with mashed potatoes for our dinner. I left plenty of space on the plate, for the bones! It was very tender and easy to remove from the bone. My least favourite part of making oxtail is searing the meat. I use a splatter guard, but it still spits fat at me when I turn over the pieces.

That dinner sounds amazing!
Oxtail is a delicious dish, but I understand how tricky it can be to brown the meat with all the grease splatters. I like the side option you chose. Your result looks truly delicious. Thanks for sharing!

It’s not a pretty photo, but these are egg yolk waffles I make to use up extra yolks. I prefer to make these, instead of custards, because they freeze well and serve as a quick breakfast item. They are also low carb, so can be used as a substitute for bread.
Basic batter: 4 egg yolks, 1 tablespoon melted butter (14 grams), 1/2 teaspoon…

What a brilliant idea. I’m thinking a bacon, egg, spinach or avocado breakfast. 🙂

I made two Angel Food Cakes for friends this weekend. It’s such an easy cake to make, but it uses up a lot of egg whites. I used the yolks to make egg yolk waffles.

I love these types of desserts where the cake is so fluffy. It’s so versatile that you can pair it with fruit, as you did here, and some delicious whipped cream.
Thank you for sharing; your result and photo look truly beautiful.

For lunch today, I made a quick salmon bowl, with sushi rice, steamed broccoli, roasted peppers and salmon with hoisin sauce. I sprinkled spring onions and coriander leaves on top. Quick, fresh and healthy.

Hi Mandie.
Your lunch looks delicious and well-balanced. The presentation is colorful and appealing. The different colors of the ingredients (green from the broccoli and cilantro, red from the peppers, and the golden hue of the salmon) create a nice contrast that makes the dish look appetizing.
The arrangement of the ingredients in the bowl… Seguir leyendo

Do you ever cook with chicken feet?
I know that it’s a popular street food in some places, including my home country of South Africa. Today, I’m adding it to chicken stock, to extract extra collagen.

My daughter was sick today, so I immediately made some chicken noodle soup. I love the vibrant colours of the mirepoix. There’s nothing like fresh food made with love to restore body and soul.

Oh no. Hope your daughter has a speedy recovery. We have a nasty cold going around at the moment (Melbourne Aus), it’s taking ages to get over. 😩

We’re sorry to hear that your daughter is sick, but she has a super mom who made her a delicious chicken noodle soup. There’s something magical about a mom’s soup that comforts and heals you right away. ♥️

I enjoyed this arugula salad with dinner last night. The dressing includes lemon juice, honey and pomegranate molasses. It’s sprinkled with pistachios, pomegranate seeds and Parmesan cheese. It was zesty and refreshing, alongside fillet steak, roasted mixed peppers and steamed broccoli.

Hi Mandie
It looks absolutely delicious and super fresh. I’ve never tried pomegranate in a salad before, so this is a great reason to start including it in mine.
Thanks for sharing!
Best regards.

She said “pomegranate molasses” 😋 Here in Argentina, pomegranate isn’t available, nor is the molasses. I would love to try it sometime.

We’re headed towards the height of summer in Dubai and it’s too hot to cook. I made a simple Caesar salad for myself and ordered takeout for my family. What do you cook during the summer?

Hey Mandie! ☺Nice to hear from you. I tend to eat easy and quick meals during summer. 😉I just came back from a trip to Spain and, adding the fact that we were eager to visit all the places we had planned to, we stayed at several places where we could cook. With 36 degrees, we chose fresh salads most of the time. Not only for the freshness but…

Hi Mandie Lowe.
A Caesar salad is an excellent choice for hot days, and yours looks truly delicious.
When it’s summer season here in my country (Peru), we tend to prepare one of our typical dishes more frequently—ceviche, a very refreshing dish, or sometimes a cold pasta, which is also a great option.
Thank you for sharing with the community;…

Last night I gave my new pizza oven another workout. This was my second time using it. The learning curve is steep! The first time, I had difficulty launching the pizzas smoothly. This time, I used more flour and that was also bad, the flour got burnt at such high temperatures. By the seventh pizza, it was going well, very little flour,…

I tried Chef Mario Sandoval’s recipe for pork with Romaine lettuce emulsion this evening (from the Spanish Haute Cuisine course). I had a fabulous time, creating something new in my kitchen. The recipe calls for a suckling pig, but I substituted roast pork belly, as that’s what I had available.
I was mainly interested in the lettuce emulsion.…

I can’t wait to see the results…
