Chicken and Mushroom stir-fry
This really was a way to use up all kinds of bits from the fridge. I had leftover cooked chicken and half a punnet of mushrooms. I also had some red peppers that were going soft and needed to be used. I added onion slices and I always keep egg noodles in the freezer.
I made a sauce from soy…

I recently recreated my favourite take-away pizza, a chicken and mushroom pizza. Unfortunately, over the years the quality of the fast food version has declined. They’re using fewer toppings, the base tastes bland and the pizza is dry. So making it at home gives me the opportunity to make it the way I remember it. It contains chicken,…

Great idea, Mandie! There’s nothing like recreating our favorite dishes at home to bring back that authentic flavor we love. I really like the combination of ingredients you used, especially the burger sauce as the secret touch. 😉

I made four different pizzas for this challenge, but at the end of the day, the simplest pizza made for the most attractive photo. Nothing fancy, just good quality ingredients. This is my husband’s favourite – pepperoni and olive #pizzaslicechallenge

I’ve been craving a very specific salad from a restaurant that they call “Village Salad”. The ingredients are neatly arranged, with a giant piece of soft Danish feta on top. Luckily, it’s easy enough to make at home. Mine is not as neat as theirs, but it hit the spot. I had it with crispy cod fishcakes.

Mandi, what a delicious combination! Even though you mentioned it wasn’t as neatly arranged, the important thing is that the flavor was exactly what you were craving. The soft Danish feta and crispy cod fishcakes sound like the perfect pairing.
Definitely a meal to enjoy!

We don’t often have pancakes for breakfast, but I am trying out recipes from a cookbook for my bookclub. As good as these were, I much prefer savoury breakfast dishes. How about you, savoury or sweet, or both?

It seems like this recipe was a huge success. I love the combination of sweet and savory, so I would enjoy something like this all the time. I also have to say that the photography is great; it really makes you want to take a bite of those pancakes right now 😅.
Thanks for sharing with the community.

Venison loin, served with blueberry sauce, chestnut purée, vegetables and pommes Anna. The meat was springbok, from South Africa. I made this for a dinner party.

What a sophisticated and well-thought-out dish, Mandie! The venison loin with blueberry sauce sounds delicious, and I love how you combined such unique flavors like chestnut purée and pommes Anna.
Choosing springbok meat from South Africa is really special and adds an exotic touch to the dish.
I’m sure your guests were impressed with this…

Looks great! Did you use either a wine or venison stock for that sauce? I’m trying to taste it in my mind and it wants more than blueberry to imagine 😁

Macarons filled with apple and caramel. I like to keep empty macaron shells in the freezer, so I can make a filling and prep macarons for guests without too much fuss. I always mature my macarons in the fridge overnight. It enhances the taste and the texture.
Have you made macarons yet? The Scoolinary macaron course is excellent!

What a delight! I love the idea of combining the sweet and tart flavor of apple with caramel in macarons. Plus, the trick of storing empty shells in the freezer to always have something ready is very practical, especially when you want to impress your guests without any hassle.

I made the Blue Cheese Financiers from the Travel Cakes course by Eunyoung Yun! And my goodness, are they delicious! They completely blew me away with how good they were.
They don’t taste overwhelmingly of Gorgonzola. In fact, I wouldn’t have known it contained blue cheese, if I hadn’t added it myself. The financiers are soft, sweet, nutty…

I’ve made something amazing. Let me look through my photos to pick the best one. In the meantime, here’s a preview of the process. It doesn’t look like much, right? It contains glutinous rice flour, brown butter and Gorgonzola. That’s right, blue cheese! When I heard the ingredient list, I knew I had to make it.

My cabbage kimchi has been prepared and placed inside a special kimchi fermentation container. It won’t start fermenting for a while, so now I just have to wait. You can eat it “fresh”, but you won’t benefit from the live cultures created through fermentation.

Hi Mandie.
I like that the kimchi is prepared in a traditional way. I love how each cabbage leaf has been carefully coated with the spice mixture. You can really see the attention to detail in each step of the process. It’s interesting that you mentioned the importance of fermentation to reap the benefits of live cultures. I’m sure that after…

It’s kimchi day at my house today! Remember that Scoolinary has a course on fermented foods, including a basic kimchi recipe. You can’t get the benefits of fermentation from canned or jarred kimchi, as the processing kills the live cultures. It’s easy to make at home, though!

Hi Mandie.
It’s great that you’re dedicating a day to making kimchi at home. It’s true that commercial kimchi can lose the benefits of live cultures, which is a shame considering how healthy they are. Making it at home not only preserves those benefits but also allows you to adjust the recipe to your taste. Plus, the homemade fermentation…

Dubai is quite an expensive city, as most food is imported from all over the world. I like to “shop the sales”, so when I found a packet of fine French green beans at a reduced price, I had to buy it.
I made a very popular South African side dish: green bean mash. It’s simply green beans, potato, butter, salt and pepper, mashed together.…
