I cooked a vegetable stock and a demi-glass. ❤️🌿🥕🍅
While the oven was worked on pizza, I decided to fry up a veggie medley (onion, leek, beetroots, carrot, tomato press). Tossed in a lively Bouquet Garni, fast boil, and slow-cooked for 45 mins. Filtered with muslin, and voilà, the stock was ready.
Half went back for a slow reduction, added some starch, and boom – demi-glass perfection. Couldn’t resist a taste test… Stay tuned for the reveal in the next post! 🍲👩🍳
