La copio aquí para que podamos ayudarle:

“El caso es que no se me ha resuelto la duda

Y es si el tartar de sepia según la receta no se cocina y me parece que tiene que quedar dura la sepia. La receta es Calamares en su tinta con arroz cremoso donde se hace un tartar de Sepia para adornar a dicho arroz.

Efectivamente, Iñaki se refiere a la receta del Calamar en su tinta con arroz cremoso, no a un tartar.
Agradeceríamos nos ayudes a resolver su duda. Si es que ya lo respondiste en otro comentario, por favor vuélvelo a copiar ahorita.
