a the moment pizza from Luigi Di Domenica , plating David Rickett , Spanish omelet Clara Villalon, and Olive oil from Jose San Roman. I want to do a lot more but can’t do everything at once, so I need to be a little selective. 😀

You say with courgette… does it mean that you don’t use potato just eggplant for this? 🙂🤔

No I use potato and zucchini (= courgette) in this recipe. It gives a nice touch of extra taste in the tortilla.
