Pizza Asturiana
Paprika dough made with the poolish method.
Home made pizza sauce, a little parmesano then mozzarella. Toppings are thinly sliced Asturian Chorizo, Morcilla and Panceta Curada and a few fabes beans cooked in iberico fat. Could also have named it a Fabada Pizza.
Cooked in the Pizza dome over hard wood at 475f. Will definitely be doing this one again.
Crust was really airy and got a good Zebra pattern.

I love the creative combination of traditional Asturian flavors you chose for your pizza. Using ingredients like chorizo, morcilla, and fabes cooked in Iberian fat adds a delicious touch.
