I forgot to share the final dish! To us it’s known as chicken riggies but I thinK it’s another regional favorite. So think chicken tossed in a tomato cream sauce with a LOT of spicy peppers (plus some roasted red peppers to mellow it out)

Oh, yes, Michelle! It’s a lovely and endless path you started. Love pasta and all the million varieties it has. I had some magnificent Tortellis the other day, for our Anniversary dinner. They were incredible.

It’s been a busy week so it felt good to be back in the kitchen. This saucy chicken cornbread skillet starts with a jalapeño honey cornbread base which can stand alone in our humble opinion!

Got a little ahead of myself trying out what I’ve learned in Rory Macdonald’s puff pastry class. I don’t mind admitting I need much more practice perfecting rolling (and not overloading the pastry to give it room to puff). But I have to say at least it tastes amazing! ☺️

Even though you say you still need some practice, I think the golden color and presentation already look amazing.

This might be a regional dish so I’m curious if anyone has heard of Utica greens? It’s blanched escarole that’s tossed with sautéed onions, garlic and pancetta. Add in your preferred amount of pickled hot peppers, top with Panko and Parmesan and broil till golden brown.

We’re having unusually warm fall weather here so I decided to grill tonight for a steak and fritte salad with a vinaigrette made with rice wine vinegar and Mirin. We love the crispy potatoes on top.

Making some treats for my co-workers and students today and thought this kind of fits the #HalloweenChallenge (Plus I needed a new video for my Instagram account ☺) These are pumpkin spiced mini-muffins filled with dark chocolate chips. I have to share them because they make a ton and we’d eat them all ourselves!

I’ll just confess I dropped a couple while plating, but these potato stacks were such a great compliment to my Parmesan breaded chicken. It was the layers of butter, thyme, parsley, and garlic. I’ll absolutely make them again.

I don’t know about you, but my anecdote for a long day at work is having some fun in the kitchen. Tonight I took my favorite meatloaf recipe, made it in muffin tins and “frosted” them with a cheesy buttermilk mashed potato.

You all inspire me! Cleaning out the fridge before more work travel, I decided to embrace the #zerowastechallenge by using up the remnants from our trip to the lake this past weekend. So a bit of turkey, Italian bread, cheese, tomatoes, shredded potatoes and ranch Mayo became turkey paninis with hash brown patties.

Spent the weekend in one of our favorite areas where there’s a farm stand on just about any corner. So I had to make stuffed spaghetti squash. Seasoned with salt, pepper, sage and a drizzle of olive oil, they roast at 400 degrees for about 45 minutes.

Almost a dinner crisis when son wanted to come for dinner and I didn’t have time to prep my normal potato options. Quick sauce of zucchini, peppers and tomatoes tossed in pasta and topped with grilled steak.

I fell in love with Patatas Bravas in New Mexico so I had to recreate. I got the potatoes super crispy in the air fryer and had enough salsa brava left over to serve beside the garlic aioli! Perfect football watching snack.

I was so ready to cook tonight after being away! But the options were a bit lacking 🤣 So when I make meatballs, I always freeze a batch which were perfect for these crockpot meatballs with a savory gravy served over buttermilk mashed potatoes. Just the comfort food we needed!

It’s nice to have a go-to in the freezer. Whenever I have to make a ‘batch’ of anything, there’s always enough to freeze some. When I make raviolis I always make extra on purpose though.🙂
