That risotto looks amazing! 🙌🏻
The combination of corn, bell pepper, and the touch of saffron sounds delicious and well thought out. I bet the natural sweetness of the roasted corn gives it an interesting twist on the classic flavor. Plus, the texture looks super creamy,just the way a good risotto should be.
Did you roast the vegetables before adding them, or did you cook them along with the rice? I think that’s a great way to bring out more flavor, and a bit of smokiness could work really well too. If you ever make it again, you might want to try roasting the onion as well for an extra layer of flavor.
