    Good morning.

I would recommend you looking at Introduction to Fermentation by:

    Robert Ruiz Moreno

That will at least give you an understanding of how fermentation works.

That should give you a base to work from.

    😁

    Hi, @dimitriskaprlive-com

Welcome to the forum, thanks for your question.
Wild fermentation is a fermentation spontaneously caused by natural yeasts (also natural yeasts, environmental yeasts, wild yeasts, grape yeasts, vineyard and winery yeasts).
Sourdough is a wild fermentation, carried out by combining flour and water. It turns out that cereals, especially whole grains, naturally contain yeast.

We hope this information is helpful
    Greetings

      Hi @dimitriskaprlive-com

Lactic fermentation generates lactic acid, although some bacteria also form ethanol, carbon dioxide and acetate. This group includes yogurt, kefir, sauerkraut and kimchi, products of which we will talk later.

      Alcoholic fermentation
It is when ethanol and carbon dioxide are generated in the fermentation process, as in the case of bread, beer and cider.

In this case, wild fermentation would be alcoholic fermentation.

      Greetings.
