Hi isIyamov
Welcome to the Scoolinary community, and thank you for your question.
Yes, you can store donut dough in the freezer to extend its shelf life. Here’s how to do it:
1. First Fermentation: Allow the dough to ferment once, as you normally would.
2. Shaping: After the first fermentation, shape the dough into donuts.
3. Freezing: Place the shaped donuts on a tray lined with parchment paper, ensuring they don’t touch each other. Then, freeze them until solid.
4. Storage:Once frozen, transfer the donuts to an airtight bag or container to prevent ice crystals from forming.
Storage Time:The donut dough can be kept in the freezer for up to 2 months.
When you’re ready to use them, let them thaw and proceed with the second fermentation before frying or baking. The fermentation after thawing may take a bit longer than usual.
