    With regards to chef Kriss Harvey’s course on pate de fruit facing an issue with the pate de fruit getting wet and sugar dissolving I am coating the fruit pcs after around 2 hours it’s settled in the mould what is going wrong pls help 🙏

    5. Product formulation: The proportion of sugar, pectin, and other ingredients in the recipe also affects the texture and ability of the fruit pâté to stay dry. An inadequate formulation can lead to a greater tendency for moisture.
