    Ingredients:

    500 grams of sugar
    240 ml of water
    1 gram of citric acid (approximately 1/4 teaspoon) or 2 grams of cream of tartar
    1/2 teaspoon of baking soda

    Instructions:

    1. Dissolving the sugar: In a saucepan, mix the sugar and water. Heat over medium heat, stirring constantly until the sugar is completely dissolved.

    2. Adding the acid:Once the sugar is dissolved, add the citric acid or cream of tartar. This will help break down the sugar into glucose and fructose.

    Stir well to ensure the acid is fully incorporated.

    3. Cooking: Let the mixture simmer gently. You don’t need to stir constantly, but make sure it doesn’t burn. Simmer for about 20-30 minutes.Use a kitchen thermometer to monitor the temperature. It should reach 114°C (237°F).

    4. Neutralizing the acid: Once the mixture has simmered long enough and reached the desired temperature, remove it from the heat. Add the baking soda. This will neutralize the acid, and you’ll see the mixture bubble a bit. Stir well.

    5. Cooling and storing:Let the mixture cool to room temperature.

    – Pour the invert sugar into a clean, dry glass jar with an airtight lid.

    – Store in a cool, dark place.

    Homemade invert sugar can last several months if stored properly. Use it in your baking recipes to improve texture and better preserve your products.
