    To replace fresh yeast in bread making, you can use these substitutes:

    1. Active dry yeast: Use about one-third of the amount of fresh yeast. For example, if the recipe calls for 30 g of fresh yeast, you can use around 10 g of active dry yeast. This yeast needs to be rehydrated in warm water before mixing it with the other ingredients.

    2. Sourdough starter: If you have an active sourdough starter, you can use it as a substitute. You generally need a larger quantity than fresh yeast (about twice as much), and you will also need to adjust the flour and liquid in the recipe.
