    Hello! I was watching course The fundamentals of pizza. Can you explain me when I prepare poolish – where is the proportions for next kneading? I can’t understand. Please, help me understand.

    Poolish is a preferment, the quantities are in the recipe book and the video procedure is in chapter 5.

    Once you get your poolish , in the recipe book you have a dough where you can use it, it is the “vegetable pizza” recipe.Tell us if that’s the question you Greetings.
