Flavour Pairings in Cocktails Course – Cold Sugar Syrups
Hi there,
In the “Flavour Pairings for Cocktails” course, the instructor showed how to make cold infused eucalyptus syrup with fresh eucalyptus leaves. I’m wondering if you can use the same method with dried herbs?

Hi Melanie
As a recommendation, you could heat the simple sugar syrup just a little, then add the dried leaves, let it cool and continue preparing according to the recipe.

I’ll stick to this thread because I find your question super interesting. As a matter of fact, yesterday I cut off some eucalyptus leaves to add them to my ‘mate.‘ Have you tried it? It’s a classic Argentine beverage.
