    Yes, you can substitute whole milk powder with skimmed milk powder without any problem.

    The main difference between the two is the fat content: whole milk powder adds a bit more flavor and richness due to the fat, but in this recipe the amount used is quite small (25 g), so it won’t significantly affect the final result.

    If you’d like to compensate a bit for the lower fat content, you could add 5–10 g more of butter to the recipe. Even with skimmed milk powder, the dough will still turn out soft and flavorful.
