Hello , I want to ask about the croissant baking in the oven. Do you use the fan ? if yes can u point the speed of the fan ?

Yes you can use the fan option on your oven.
It should be ventilation at a medium level.
Just make sure that the internal heat of the oven is what the recipe indicates.
