Coloured pasta dough from the colourful pasta course
Escrito por Zenobia Chacko on noviembre 30, 2024 en 07:43Hey so ive signed up for the colourful pasta course…
And actually theres no video demo of how the colourful pasta dough is made only how the already coulored doughs are assembled
I checked the recipe book and it just says use 50 gms flour with yolks….doesnt say how much.
Or how much colour to use.
As chefs not home cooks are we supposed to be very specific?
Please help

Hi Zenobia.
Hello,
The content team has informed me of the following:
“As explained in the video, the quantities depend greatly on the humidity of the flour, the size of the eggs, and the elements that add color (such as cocoa, which can dry the dough, the concentration of purées, etc.).
The video for making colored pasta dough is this one: https://www.scoolinary.com/courses/colorful-italian-pasta/lessons/fresh-rainbow-pasta-presentation-of-ingredients-and-concept-2
Similarly, for the classic dough, here is the video:
https://www.scoolinary.com/courses/colorful-italian-pasta/lessons/preparation-of-the-pasta-girella-2 “
We hope this information is helpful.
Best regards.
