To blanch puff pastry, the following process is typically followed:
-First, preheat the oven to the temperature indicated in the course.
-Next, prepare the pastry by rolling it out to the desired thickness and placing it on a baking sheet. You can lightly prick it with a fork to prevent it from puffing up too much if suggested in the course.
-Cover the pastry with parchment paper and place another baking sheet on top to keep it from rising excessively. This helps it stay thin and even.
-Bake the pastry until it is just cooked and begins to turn pale, without browning. The time may vary depending on the thickness and oven type, but it’s usually between 10 and 15 minutes.
This process pre-cooks the pastry without browning, keeping it smooth and low in volume, ready for filling or for use in other preparations where a flat, even puff pastry is needed.
