I remember that a few years ago when I was learning about natural ferments I also gave my sourdough the name “spongy”. In the end my dough died because it required a lot of care, so I like the idea of people giving their sourdough a name. I think the dough grows with a better attitude when it has a name. 😅
We are sure that “mustafa” will be an excellent sourdough and we hope to soon see preparations that include it.
