      Potato Gnocchi with Creamy Spinach Sauce, Topped with Crispy Bacon and Toasted Almonds

      Ingredients: Potatoes (Russet for their fluffy texture); Flour; Eggs; Fresh spinach; Heavy cream; Parmesan cheese; Bacon; Sliced almonds; Olive oil; Onion; Garlic; Salt and pepper

      Techniques Used:

      Potato Boiling; Gnocchi Making; Sautéing; Blending; Hand Chopping; Toasting; Seasoning

      Gnocchi Making:
      Potatoes are boiled until tender and then mashed to a smooth, lump-free consistency. The mashed potatoes are combined with flour and egg to create a dough that is soft yet firm enough to hold its shape. The dough is carefully shaped into small dumplings, which are then gently boiled until they rise to the surface, indicating they are cooked perfectly.

      Spinach Sauce:
      Fresh spinach is sautéed with finely chopped garlic, allowing the flavors to meld while maintaining the spinach’s vibrant color and earthy taste. The spinach is then blended with heavy cream and Parmesan cheese to create a rich, velvety sauce. Seasoned with salt and pepper, the sauce reaches a perfect balance of creaminess and flavor.

      Bacon Garnish:

        The delicateness of it all makes me almost feel the tenderness in my mouth — and few things are as beautiful and umami-packed as a perfect gnocchi.           Me encantan los ñoquis y no puedo parar de mirar los tuyos. Son perfectos, su forma es ideal y se ven tiernos y esponjosos. La salsa es como un abrazo y las almendras, todo un acierto

            @Beatriz Torija Thank you, sis! That means a lot coming from you. I really wanted the gnocchi to be light and tender, so I’m glad it shows. And to tell you the truth, I’ve become addicted to toasted almonds 😂

              Tienes que darnos las proporciones de patata y harina de los gnocchis… los he hecho en solo una ocasión, pero creo que no salieron muy bien 😬

                @Beatriz Torija Haha, you’re absolutely right about the almonds, they’re impossible to resist! For the gnocchi, I use 800 g of potatoes, 500 g of flour, 4 eggs, 1 teaspoon of salt, and 80 g of butter. If you want, I can also share the full recipe. It’s not hard once you get the hang of it!
