Abhishek, this is like something out of a movie!
That lemon has so much life in it, it almost feels like you could squeeze it and make lemonade right there 🍋✨ Such a polished job! The shine, the shape, even the texture… everything is so well done that it’s hard to believe it’s not a real fruit.
It’s so exciting to see how you’re getting more confident with all these pieces from the course, and this is already your fourth! How was the experience working with this shape? Did you have to try multiple times to get such a neat finish?

@sussan_scoolinaryteam Thank you so much! 🍋✨ This one was such a joy to make—I was especially happy with the finish since it was only my second time using the airbrush after the hazelnut, and it really brought the texture to life. The shape being similar helped too, and Chef Damien’s way of breaking it down made all the difference!
I do have a question though—I’d love your thoughts! For the strawberry insert, I used cornstarch instead of Ultratex, and the texture turned out a bit icy compared to Damien’s. I’m wondering if that might’ve been the reason, or if I should’ve chilled it longer before cutting. Ultratex is tough to get here in small quantities—do you have any suggestions for a good substitute?

Regarding your question about the strawberry insert: yes, it’s quite likely that the texture difference comes from using cornstarch instead of Ultratex. Cornstarch tends to create a firmer, more opaque texture once chilled or frozen, which can result in that slightly icy or dense mouthfeel—unlike the smooth, gel-like finish you get from Ultratex, which provides elasticity and clarity without requiring heat.
Here are a few alternatives that might work better for you and could be easier to find:
1. Xanthan gum: Used in very small amounts, it can help create a smoother, more stable texture when cold. It dissolves well in cold liquids and helps achieve a silky finish without the stiffness of cornstarch.
2. Pectin NH: Ideal for fruit inserts, it offers a firm yet flexible texture that improves with refrigeration. It does need to be heated, but the result is beautifully refined.
3. Agar-agar (in small doses): This can work well if you’re aiming for a firmer set, though you’ll want to be careful with the ratio to avoid an overly stiff result.
And of course, as you mentioned, the refrigeration time before cutting also plays a role. If an insert isn’t properly stabilized, it can lose moisture when sliced, which affects the texture too.

And THIS? This is the lemon drop dreams are made of. The textures are out of this world—the glossy shell has that delicate snap, the cream layer looks airy and smooth, and that vibrant core?
