I love how you managed to highlight the warm colors in the plating.Perhaps, for a future occasion, if you’d like, you could add a fresh basil leaf as decoration. This would not only provide a nice color contrast but also enhance the freshness of the dish.

Quick question: Did you add the ricotta salata at the end for contrast, or was it incorporated earlier in the process? That subtle saltiness really enhances the whole experience. The Ricotta Salata is added at the end to add a Salty and more conplex flavor to the tomato.
Also forgot to mention is a Sheep Milk Ricotta Salata.
