Chicken and Mushroom stir-fry
This really was a way to use up all kinds of bits from the fridge. I had leftover cooked chicken and half a punnet of mushrooms. I also had some red peppers that were going soft and needed to be used. I added onion slices and I always keep egg noodles in the freezer.
I made a sauce from soy sauce, mirin, sesame seed oil and honey. Topped with fresh coriander leaves, my daughter declared it to be “delicious”! Nothing was measured, I added everything to taste. Such a stir-fry is a good way to use up all kinds of vegetables and leftover meat.

Stir-fry and pasta are two good ways I use up a lot. I always have a few kinds of noodles and rices around to throw those kinds of dishes together.
