      I only had this black stone plate. I made a pork fillet cut into slices. Also used boiled vegetables and cut them in sphere shape, and carrot/celery root cream for the decoration. I hope this dish counts for the challenge

      Beef Tenderloin with prosciutto and Lemon Foam.

      I used the same plate as for the ravioli but, it looked the most appropriate to me

      I hope this counts, I only have worked with foams at school using a siphon. For this one I had to use a technique that doesn’t require a siphon.

      I haven’t seen the whole Neapolitan Cuisine course yet, but I chose a dish and watched the tutorial for the challenge.The course is very interesting I will definitely watch It all.

      This is my try on Caprese Ravioli, I didn’t have much time, but I tried my best.

      Greek Salad with a twist.

      This is a new salad I learned at work, it has all the ingredients of a Greek salad, but also it has croutons, corn, and chicken.

      I really love Greek cuisine, one of the first courses I took in scoolinary was Greek cuisine. Mediterranean cuisine is so unique on its own.

            Chicken Involtini with vegetables.

            This dish was a reason to practice some plate presenting ideas.

            Tried to make some herb oil, also learned in scoolinary courses, and culinary school a couple years ago.

            The dish also contains some beetroot mayo with only egg whites, and red pepper pure.

              There are still a few things to improve, looking back at it. As an example, would’ve been better to use only 3 chicken rolls, and the dot placement to had been thought more.

                Yes I did mention it in the original post. The sauce is from the Classic Sauces course. I used the hollandaise sauce recipe to make it as the sauce on top. There is where I got the idea to make the egg Benedict.

                Home-made sushi rolls with different fillings. First time i tried to make sushi at home.

                For some of the fillings I used:

                Cream cheese

                Salmon 

                Tuna

                Cucumbers

                Avocado

                They turned out very good. Not too expensive, and mess free.
