When baking croissant or pain au chocolat do we bake in convection oven or regular oven?

Hi,
If I want to use a spiral dough mixer to make the croissant dough, instead of the stand mixer, do I start with all the ingredients together in the bowl or is there a different process?

Hi, if I wanted to use half the recipe for croissant, what would the measurement for the sheet be?
One dose of the recipe is 50×30, Mr Bachour mentioned that if we want to double it to make it 60×40, but what about half?
