      Even if they spread in the oven, the combination of rum, salted caramel, and toasted pecans sounds amazing,definitely a flavor worth repeating!

      If you want them to hold their shape better, you could try chilling the dough well before baking or thickening the caramel a bit so it doesn’t leak out as easily.

    Just had to try these pinwheel cookies (from Anna Gordon’s American Cookies course) though I only had bread flour so needed to tweak the recipe a little. What a great idea and I filled them with homemade nutella – delicious. #CookeChallenge

      Using bread flour definitely changed the texture a bit,maybe they turned out a little firmer or had a different bite. And with homemade Nutella… double bonus!

      If you want to tweak the texture to be closer to the original, you could try reducing the gluten slightly with a bit of cornstarch or letting the dough rest longer to relax. Did you… Read more

    I don’t like too crispy a cookie but I love the flavour of a spicy ginger snap, so I’ve been experimenting with the ginger spiced molasses cookie but made in the style of a chewy chocolate chip-style. Same taste profile, different texture!

      What an interesting experiment! Achieving a soft and chewy texture in a spiced molasses cookie must have required precise adjustments to the ingredients and baking time.
