    Today, my toddler and I baked double chocolate chip muffins. She loved it and she ate far too many chocolate chips. These muffins will go into the freezer (we made 12) and taken out one and a half hours before serving.

    We enjoy eating oxtail. Here, I served it with mashed potatoes for our dinner. I left plenty of space on the plate, for the bones! It was very tender and easy to remove from the bone. My least favourite part of making oxtail is searing the meat. I use a splatter guard, but it still spits fat at me when I turn over the pieces.

      Oxtail is a delicious dish, but I understand how tricky it can be to brown the meat with all the grease splatters. I like the side option you chose. Your result looks truly delicious. Thanks for sharing!

    It’s not a pretty photo, but these are egg yolk waffles I make to use up extra yolks. I prefer to make these, instead of custards, because they freeze well and serve as a quick breakfast item. They are also low carb, so can be used as a substitute for bread.

    I made two Angel Food Cakes for friends this weekend. It’s such an easy cake to make, but it uses up a lot of egg whites. I used the yolks to make egg yolk waffles.

        For lunch today, I made a quick salmon bowl, with sushi rice, steamed broccoli, roasted peppers and salmon with hoisin sauce. I sprinkled spring onions and coriander leaves on top. Quick, fresh and healthy.

        My daughter was sick today, so I immediately made some chicken noodle soup. I love the vibrant colours of the mirepoix. There’s nothing like fresh food made with love to restore body and soul.

          I enjoyed this arugula salad with dinner last night. The dressing includes lemon juice, honey and pomegranate molasses. It’s sprinkled with pistachios, pomegranate seeds and Parmesan cheese. It was zesty and refreshing, alongside fillet steak, roasted mixed peppers and steamed broccoli.

            I made the Bacon Juancheeseburger from the Hamburger course by Juancho de la Rica. It was delicious! As a distinctive touch, I added grilled onions to my burger. #CopyCatBurger

                    Today I made tomato soup and sourdough potato focaccia, then repackaged 25kg of pizza flour into smaller bags, to store in the freezer. I am prepared for my pizza making adventures!
