I have one question please the recipe for mango and Lemon entremet in the pdf are the ingredients of lemon mousse , glaze , cake , mango compote and mango creamy sufficient for 3 cakes of 16 cm diameter each? And is it possible to scale it down if it’s my first trial?

And since there is no recipe for the pate fermente I’ve looked for one on the internet with the following ingredients what do you think?

150 grams all purpose flour

100 grams water

3 grams salt

1 gram instant yeast

Hello Susan, thank you so much for taking the time to answer my questions I really appreciate the effort. I realized that my oven is the problem and I should consider getting an electric one for things like eclairs and macarons .
