I’ve been traveling for work and have missed our community here! I have been in New Mexico where they put chili peppers in everything. Including this BLT (but it was such a great addition I may have to do it at home!)

Just a disclaimer that this was way overly indulgent and not healthy at all, but inspired by the Two Chefs and a Knife fried chicken course, I made hot Nashville fried chicken and WOW it was so good.

I spent most of my life in Nashville and have eaten a lot of hot chicken from the place it was created. I have to try this course just to see how it stacks up against the real deal!!!

Well hello new stove. I’ve missed you so! Simple, rustic pasta with roasted broccoli, sausage and a white wine sauce. Just to test out the oven and the burners.

Well the (hopefully) last stoveless meal was supposed to be Piadina. But the dough came off the grill more like a flatbread so we rolled with it. (pun intended) A roasted red pepper sauce base, was topped with chicken, fresh mozzarella and greens tossed in a citrus vinaigrette.

I liked your result; sometimes the best recipes come from those little unexpected changes. The combination of chicken, fresh mozzarella, and the citrus vinaigrette with the roasted red pepper sauce must have added a delicious touch.

Adventures in waiting for our new stove part two. We love a good sheet pan supper so tonight’s was improvised on the grill. Pork chops, fingerling potatoes and broccoli. All with variations of a honey, Worcestershire and ranch seasoning blend to tie everything together.

Improvising on the grill while waiting for the stove is a great idea. The pork chops with fingerling potatoes and broccoli sound delicious, and that combination of honey, Worcestershire sauce, and ranch seasoning must have given the whole dish an amazing flavor. I’m sure it turned out incredible!

Well our stove stopped working last night. New one arriving on Friday so it’s going to be a week of creative cooking. Tonight I thought I’d do a stir fry on the grill but torrential thunderstorms rolled thought so behold I give you beef and snow pea “stir fry” from my air fryer. Thankfully I had cooked coconut rice in the freezer.

Here’s a question for you all! Do you have a favorite make ahead lunch? I love prepping lunches on Sundays for days I am in the office but am always looking for new ideas. This week I made eggplant curry with coconut rice which was really good.

I love finding a recipe for something I haven’t made in a long time and we forgot how much we enjoy it! Pork piccata with buttermilk smashed potatoes and green beans tossed in a Milanese gremolata olive oil. I didn’t have shallots so diced red onion worked in a pinch for the sauce.

Finally the rainy has stopped so it’s grilling time! Grilled steak, potatoes and fresh snap peas. This was my first time making a balsamic reduction to drizzle on the steak and I can’t believe the extra flavor it brought out.

Inspired by Bryan Furman’s American Barbecue class, I’ve been experimenting using our pizza oven as a charcoal barbecue. I wasn’t brave enough to do a whole chicken but these chicken breasts came out so well. Super moist, touch of smoke, and a nice glaze of honey/habanero sauce.
