Hi I ‘m from tunisia, I have a pastry shop I m professional thank you from your feed back i viewed the course gluten free but I ´my not sure that we can replace coconut oil with virgin olive oil it’s so liquid and for the emulsifier can we replace by xantane it’s available here thank you

The fats must be replaced with another fat. If you want to replace coconut oil, the closest thing would be vegetable oil or ghee in a more solidified state.
