Vegan natural emulsifier
Posted by ruth guthrie on December 3, 2023 at 09:41In the Vegan pastry course the instructor uses a “natural emulsifier” in making a mango mousse. Can you tell me what exactly that is please, is it lecithin or pectin or something else?

Yes, it is soy lecithin.
I don’t know if you can find this brand of product in your area, but the Sosa brand sells natural emulsifier.Greetings.

I can get Sosa products, however it is more common to find liquid sunflower lecithin
