how many minutes i cook the croissants and what degree and what about the fan i open it or not and the steam i use it or not also thank you

If it is Chef Bachour’s recipe, the croissants must be baked at 170° (preheated oven), for 18 minutes.
The oven should be dry, steam-free and with medium to low ventilation.
