It is not recommended to store unbaked macaron batter in the refrigerator for later use. The batter may lose its proper consistency, which will affect the texture and shape of the macarons when baked.
The best practice is to prepare and use the batter immediately after making it. If you need to plan ahead, you can pipe the shells, let them dry, and bake them later, or simply bake them right away and store them in an airtight container until you are ready to fill them. This way, you’ll ensure the best results.
