Type of flours used in sourdough bread course
Posted by gallucciursula on January 19, 2025 at 21:57What type of flour, and it’s protein percentage, is the chef using in the sourdough country loaf recipe?

Hi Mina.
As I mentioned in your previous post, you can continue using your sourdough starter even if there’s liquid present. Just follow the recommended guidelines.
If you have any other questions, I’m here and happy to help you resolve them.
Best regards.

Hi Ursula.
The flour used by Chef Hans Ovando for his liquid sourdough starter is an organic whole wheat flour.
The protein content in organic whole wheat flour can vary depending on the brand, type of wheat, and its origin, but it generally falls within a range of 12% to 15%. This higher protein content, compared to refined flours, is due to the fact that it retains the entire grain (including the bran and germ), which also contributes to its denser texture and greater water absorption capacity.
I hope this information is helpful.
Best regards.
