    But this only happens when i use whole wheat flour. And this is stone milled

    will it still be ok, if there is water?

      As I mentioned in your previous post, you can continue using your sourdough starter even if there’s liquid present. Just follow the recommended guidelines.

    The flour used by Chef Hans Ovando for his liquid sourdough starter is an organic whole wheat flour.

    The protein content in organic whole wheat flour can vary depending on the brand, type of wheat, and its origin, but it generally falls within a range of 12% to 15%. This higher protein content, compared to refined flours, is due to the fact that it retains the entire grain (including the bran and germ), which also contributes to its denser texture and greater water absorption capacity.
