    Hi Glykeria Skamagki

Welcome to the Scoolinary community! Thank you for your question.

If you live in a Mediterranean country and can’t find some of the traditional ingredients for poke bowls, you can substitute them with local products that offer great flavor and texture. Here are some vegetable alternatives for pickling:

    Pickled Alternatives for Poke Bowls:

Radishes → A great substitute for Japanese pickled daikon. Slice them thin and pickle them with rice vinegar, sugar, and salt.

Cucumber → Easy to find and absorbs flavors well. Try pickling it with a bit of ginger and chili.

Carrot → Adds sweetness and crunch. You can pickle it in apple cider vinegar with spices.

Fennel → Its slight anise flavor pairs well with raw or marinated fish.

Red onion → Adds color and a tangy touch. You can make a quick pickle with lemon and salt.

Peppers → Especially the sweeter varieties, pickled in vinegar with a bit of honey or sugar.

If you want a more Mediterranean touch, you could also try pickled olives or even eggplant.

I hope this information helps! If you have any other questions, I’m here and happy to assist.

    Best regards.
