Substitute for Trehalose
Posted by Gold-May Gwei on July 4, 2024 at 10:59Hi, what can I use to replace Trehalose during the preparation of Vegan Merengue?
Can i use fine sugar, or Maple Syrub? or any other replacement which is easier to get?

To substitute trehalose in vegan meringue preparation, you can use several alternatives:
1. Fine sugar (powdered sugar or icing sugar): This is a common and easy-to-find option. You can use it in the same proportion as trehalose.
2. Granulated sugar: Although it doesn’t dissolve as easily as fine sugar, it can also be used. It is recommended to beat well to ensure it fully dissolves.
3. Maple syrup: This can be a good substitute, but keep in mind that it will affect the flavor of the meringue. Additionally, it is more liquid than sugar, so you may need to adjust the amount to maintain the consistency.
4. Coconut sugar: This is another natural option and has a unique flavor that can complement certain desserts. As with maple syrup, adjust the quantities as necessary.
5. Agave syrup: Similar to maple syrup, agave syrup can be used, but it may change the flavor and consistency of the meringue. Adjust the amount based on the recipe.
Remember that when switching from a solid sweetener to a liquid one, you may need to adjust the recipe to maintain the proper texture of the meringue.
