    Hi Chef Jonathan, In the choux pastry for Paris Brest you are using flour 45. What can I use please? Can I use AP flour with cornstarch? what is the correct balance? 100g AP + 2 tsp cornstarch ratio?

    Hi Petra

    The equivalent of T45 flour in other countries can be found as:

    -W80

    -100

    -00

    -T45

    -405

    -0000

    I don’t really know if adding cornstarch can regulate or lower the protein of the AP flour.

    In reality you would be adding another extra ingredient (cornstarch) to the preparation of the choux dough. Try to look for a flour with the lowest percentage of protein.
