Absolute Crystal is a product used to add shine and protect the finish of certain desserts. If you don’t have access to this ingredient, a good alternative would be to use a neutral glaze or a pastry shine. Both products serve the purpose of providing shine and stability to your creations without altering the flavor.
Here is a recipe for a homemade neutral glaze that you can prepare and store, so you’ll have it ready whenever you need it.
Ingredients:
150 g sugar
150 g water
7 g powdered gelatin
35 g cold water (to hydrate the gelatin)
Preparation:
To make the cake glaze or nappage, first hydrate the gelatin in the cold water.
Next, bring the water and sugar to a boil to make a syrup. Once it reaches the boiling point, let the syrup cool down to around 60°C, then add the hydrated gelatin.
Finally, let the mixture cool and solidify.
To use the glaze, heat it in the microwave for about 20 to 40 seconds until it becomes liquid again, and then use a brush to add shine to your desserts.
Any leftover nappage can be stored in the fridge for a few days.
