Hi Mark
If you have a chamber vacuum sealer that allows you to seal liquids, you don’t need to add gelatin to the milk to prevent it from spilling during sealing. The main purpose of gelatin in this context would be to stabilize the mixture to prevent it from leaking when using a non-chamber sealer. But since your sealer handles liquids without any issues, you can omit the gelatin without affecting the texture or structure of the cheesecake.
