Size of roll out for half of croissant recipe
Posted by Leander Zola Krüger on February 19, 2025 at 16:44Hi,
for the beginning I would like to just make half of the croissant recipe for practice purposes. Does this mean that the dough needs to be rolled out 25cm x 15cm, instead of 50x30cm? Do I just half all the sizes or do they stay the same?
Thank You!

Hi Leander Krüger
Welcome to the Scoolinary community! Thanks for your question.
For the full recipe, the dough should measure 50×30 cm, and the butter should be 30×30 cm.
If you want to make half the recipe, the butter should be 21×21 cm, and the dough should be a 35.5×21 cm rectangle.
I hope this information helps.
Best regards.
