    Does the chef not demonstrate laminating using a pastry sheeter? Most pastry kitchens will need to use a sheeter, are there any videos on how to laminate using a sheeter?

    I reviewed the courses and recipes that we have available on the croissant platform and at the moment we do not have videos of machine lamination or for the moment I did not find any class that had the machine lamination technique. We hope that in future courses they can include a recipe with this method. Greetings.

    Thank you for your quick reply…one follow up if I may….Are the recipes in the course suitable for laminating on a sheeter or would they need adjustments? Meaning, can I follow the recipes and methods except when chef rolls the dough using a rolling pin I would use a sheeter to obtain the desired sizes and shapes? Thank you.

      Certainly can.

      I have used a dough sheeter and hand rolled them.

    Yes, if you have experience and know how to use a laminator you can use it without any problem.
